Vegetable Pulao



Vegetable Bath, also known as Vegetable Pulao, is a flavorful and colourful rice dish popular in South India, particularly Karnataka. It's a perfect one-pot meal packed with vegetables, spices, and fluffy rice.

This recipe yields 4-5 servings and takes about 30 minutes to prepare.

Ingredients:

  • 1 ½ cups Basmati Rice (soaked for 20 minutes)

  • 2 tablespoons Ghee or vegetable oil

  • 1 teaspoon Mustard seeds

  • 1 bay leaf

  • 1 inch cinnamon stick

  • 2 cloves

  • 2 pods cardamom

  • 1 medium onion, finely chopped

  • 1 tomato, finely chopped

  • ¾ cup mixed vegetables (carrot, peas, beans, cauliflower - chopped)

  • ½ teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • ½ teaspoon red chilli powder (adjust to your spice preference)

  • Salt to taste

  • 2 tablespoons chopped coriander leaves (fresh cilantro)

  • 1 lemon, cut into wedges (optional)

Instructions:

  1. Heat ghee or oil in a pressure cooker or a heavy-bottomed pot over medium heat. Add mustard seeds and let them splutter.

  2. Once the spluttering subsides, add the bay leaf, cinnamon stick, cloves, and cardamom. Sauté for a few seconds until fragrant.

  3. Add the chopped onion and cook until translucent.

  4. Add the chopped tomato and cook until softened and mushy.

  5. Add the chopped vegetables and turmeric powder. Sauté for 2-3 minutes, allowing the vegetables to soften slightly.

  6. Add coriander powder, red chilli powder, and salt to taste. Mix well and cook for another minute.

  7. Drain the soaked rice and add it to the pot. Stir to coat the rice with the masala (spice mix).

  8. Add 2 cups of water and stir gently.

  9. Pressure cook for 2 whistles (or 10-12 minutes) on medium heat. If using a pot, cook covered for 15-20 minutes on low heat or until the rice is cooked and fluffy.

  10. Once cooked, turn off the heat and let the pressure release naturally for 5 minutes.

  11. Fluff the rice with a fork and garnish with chopped coriander leaves.

  12. Serve hot with a drizzle of ghee or vegetable oil and lemon wedges (optional).

Tips:

  • You can adjust the vegetables used in this recipe based on your preference.

  • For a richer flavour, you can add roasted cashews or peanuts along with the vegetables.

  • If the rice seems dry after cooking, add a little hot water and let it simmer for a few minutes.

  • You can adjust the spice level by adding more or less red chilli powder.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
